Vasilopita Red Velvet Cake (Greek Christmas Cake)


Ingredients

3 cups flour tea 180 g. Flora soft butter 1 cup sugar 3 eggs ¾ cup milk 2 tablespoons cocoa (sifted) 2 tablespoons red food coloring 1 teaspoon baking powder 1 tablespoon liquid vanilla flavor 1 teaspoon baking soda 1 teaspoon of white vinegar

For the glaze:

500 g. cream cheese (at room temperature) 1/2 cup. tea Flora soft butter (at room temperature) 800 g. icing sugar 2 tsps liquid vanilla flavor

Directions

1.Brush with a little Flora soft butter to the pan and sprinkle with a little flour. Preheat oven to 170 C. 2.Dissolve the color in the milk and add the cocoa. Place in bowl of mixer Flora soft butter with the sugar and beat on high speed until well melted sugar and have a 'fluffy' mix.

3.Add one by one the eggs, vanilla, milk along with the color and cocoa and stir until you have a homogenous mix. Bring down the mixer to low speed and begin to pour into the bowl the flour mixed with the baking.

4.Beat together until have homogenous mixture. Finally, mix baking soda in vinegar and pour in the mixture. Mix with spatula and pour the mixture into the form.

5.Bake at 180 C for 1 hour. Allow to cool and remove from the pan.

6.Meanwhile, prepare the glaze beating the mixer all the ingredients together.

7.Cut the cake in half horizontally and split in two pieces. Arrange half the cake on a platter and spread over it a sufficient quantity of the glaze.

8.Place in random point the coin wrapped in foil. Cover with the second piece and cover the cake with the remaining frosting.
