Greek Spicy Baked Feta (Bouyiourdi)

Ingredients
1 piece (brick) of Feta
1 small green or red sweet pepper, sliced
1 tbsp of tomato paste
1/2 tomato, sliced in rounds
Smoked chilli flakes “boukovo”
Pinch of dried oregano
Salt and black pepper
Extra virgin olive oil
Gouda and cheddar cheese chopped in cubes (optional)
Preparation
Preheat the oven to 220C (approx 430F).
In the clay pot, arrange the slices of green pepper, and tomato to be as flat as possible.
Add a pinch of salt and a pinch of black pepper.
Place the brick of feta at top the arrangement of vegetables.
Drizzle with a small amount of extra virgin olive oil and put the tomato paste.
Top the feta with a pinch of dried oregano, and a pinch of chilli flakes “boukovo”.
Add the soft cheese's )Gouda nad Cheddar).
Bake in the oven for 15-20 minutes, covered.
