Greek Rice Pudding


Ingredients

1/2 cup glutinous rice 4 cups milk 1/2 cup sugar 2 teaspoons cornflour 1 vanilla some salt 2 sticks cinnamon optional 1/2 teaspoon powdered mastic optional

Directions

1. Boil the rice in a saucepan with a cup of water and some salt over very low heat until all the liquid has disappeared. 2. Treasury half cup of milk and dissolve the corn flour with the vanilla. Heat the remaining milk with sugar and put the sticks of cinnamon and mastic together, otherwise heat the milk with plain sugar or put the peel of a lemon.

3. Once cooked rice pour in the warm milk and cook over low heat for 10-15 minutes, stirring often 4. When you pass 10 to 15 minutes add the milk with the cornflour we keep aside. Allow to boil (about 3 minutes) stirring constantly and when thickened remove from heat.

5. When removing from heat will be quite watery but know that it will thicken as it cools further. If you want to put it on pudding cinnamon powder and put in the refrigerator.
