GREEK potato salad lightweight, cool with yogurt


Ingredients

4 medium potatoes 1 yogurt 2 tablespoons mayonnaise 1/2 pepper Florina 1 large onion cucumber pickles corn 1 carrot olive oil vinegar salt pepper

Preparation

1) Wash and boil potatoes with skin in salted water.

2) Put in a saucepan corn and carrots to boil with a little oil, salt and pepper. After some time boil, drain and let cool.

3) Finely chop the fresh peppers ,cucumber pickles and onion.

4) Cut the potatoes into medium cubes.

5) In a bowl put yogurt with the mayonnaise, mix well.

6) Put all ingredients in potatoes and add oil as much as you want (not much), vinegar, salt and pepper. Stir.

7) Then add the yogurt - mayonnaise sauce.

8) Mix all ingredients together again and put the salad in the refrigerator to cool for a while.
