Greek Rice soup with meetballs & lemon


Ingredients

750 grams ground beef ​½ cup butter ​½ cup rice ​½ cup chopped onion ​2 eggs ​3 tablespoons chopped parsley ​1-2 lemons ​salt & pepper

Preparation

Put the minced meat in a pan and add the ​½ cup rice (which we wash 2-3 times ) , onion , parsley , one egg white from the eggs , a little lemon juice , salt and pepper . Knead well . Put in a saucepan and melt the butter . Shape the meetball and place them in the pot . Then cover with hot water ( and above IF YOU WANT juicy meetballs ) put ​1 cup of rice and let boil over medium heat and stay with juice as we want . Beat the 2 egg yolks and 1 egg white with lemon juice , add juice from the meetballs to heat the mixture and pour in to the pot. Shake the pan over low heat for the sauce thickens .
